    A wooden cutting board is as safe as a plastic one. Wood’s even okay for raw meat, poultry, and long as you clean it after every use with hot, soapy water. In fact, there’s some evidence that microbes migrate into the wood and become trapped below the surface, giving a wooden board a sort of self-cleaning benefit. The advantage of using a plastic board is that it will stand up to more runs through the dishwasher. The best cutting board strategy: Keep two boards; one for meat, poultry, and seafood, and another for everything else.   back
