    Cooked ground beef that is pink in the middle can be safe, while ground beef that is no longer pink can harbor dangerous E. coli O157:H7 bacteria. The only way to be certain that your hamburger or meat loaf is hot enough to kill any bugs is to check its temperature at the center with a thermometer (see “Hot Tips”). You don’t need a thermometer for fish. It’s safe to eat when it flakes easily with a fork. And eggs are safe when their whites and yolks have set. It’s a good idea to use a thermometer, though, to check quiche, bread pudding, or other dishes that are made with raw eggs.  back
