Dish of the Month: Zucchini "Butter"

Kate Sherwood - CSPI.
Sauté 2 lbs. grated zucchini and ½ minced onion in ¼ cup olive oil until spreadable, 10-12 minutes. Season with ½ tsp. kosher salt. Enjoy on toast or pasta.
Makes 2 cups.
