This Crispy Tofu is versatile: add it to hearty salads with a miso or soy-sauce-based dressing, toss it in a vegetable stir-fry, lightly coat it with a sesame stir-fry sauce, or top it with a drizzle of peanut satay sauce.

Ingredients

  • 1 16 oz. package super-firm tofu
  • ¼ cup cornstarch
  • 2 Tbs. neutral-tasting oil (like peanut, grapeseed, safflower, or sunflower)

Instructions

  1. Cut the tofu into 8 thick slabs and blot dry. Press the large sides into a plate of the cornstarch. 
  2. In a nonstick pan over medium heat, heat the oil until shimmering. Sauté the tofu until browned on both large sides, 8–10 minutes.
