Ingredients

  • 1 cup diced melon (try cantaloupe, honeydew, and/or watermelon)
  • 1 cup diced tomato
  • 1/4 cup finely diced red or white onion
  • 1 serrano pepper, seeded and minced
  • 1 Tbs. red wine vinegar
  • 1/8 tsp. kosher salt

Instructions

  1. In a medium bowl, combine the melon, tomato, onion, and pepper.
  2. Toss with the vinegar.
  3. Season with the salt.
