The roasted peppers (or sun-dried tomatoes) add flavor and moisture to this chicken burger, while the olive oil adds healthy fats—giving you a juicy patty even with lean ground chicken breast. And the smoked paprika adds a smoky, hot-off-the-grill taste.
Tip: Jarred or homemade roasted red peppers will work in this recipe, but I prefer jarred.

Ingredients
- 1 large egg
- 2 Tbs. + 1 Tbs. extra-virgin olive oil
- ½ cup whole wheat breadcrumbs
- 1 lb. ground chicken breast
- ½ cup minced roasted red peppers (see Tip) or sun-dried tomatoes
- 2 tsp. smoked paprika
- ½ tsp. kosher salt
- ¼ tsp. freshly ground black pepper
Instructions
- In a large bowl, whisk together the egg and 2 Tbs. of the oil. Stir in the breadcrumbs, chicken, and red peppers. Form the mixture into 4 ½-inch-thick patties, then season with the paprika, salt, and pepper.
- In a large nonstick pan over medium heat, heat the remaining 1 Tbs. oil until very hot but not smoking. Sauté the patties until browned on the first side, 4-5 minutes. Flip and reduce the heat to low, then continue to cook until the patties are cooked through, 5-7 minutes.
