Dish of the Month: Sunshine Salad for Four

Whisk together 1 Tbs. olive oil, 2 tsp. lemon juice, 1 Tbs. reduced-sodium soy sauce, 1 sliced scallion, and 1 tsp. grated ginger. Toss with 8 cups salad greens and 1 cup each quinoa, avocado, and mango.
