The Healthy Cook: Tahini lemon dressing & more
A punchy tahini dressing turns crisp lettuce, crunchy veggies, and juicy chicken into a feast.

Tahini Lemon Dressing
- ¼ cup extra-virgin olive oil
- ¼ cup tahini
- ¼ cup fresh lemon juice
- 1 clove garlic, finely minced
- 1 tsp. ground coriander
- 1 tsp. kosher salt
Whisk ingredients with 2 Tbs. water until smooth and glossy.
Makes 15 Tbs. Time: 5 minutes.
For one serving of salad
- 2 cups salad greens or cold steamed spinach or other greens
- 1 cup shredded cabbage or kale
- 1 cup raw or cooked veggies
- 4 oz. cooked chicken, tofu, or shrimp
- a few leaves of mint, basil, and/or cilantro
- 3 Tbs. Tahini Lemon Dressing
