This Retro Wedge Salad is great with small heads of romaine—often labeled “petite” or “artisan” romaine—if you can find them in your supermarket’s produce section.

Ingredients

  • ¼ cup mayonnaise
  • ¼ cup plain yogurt
  • 1 scallion, minced
  • 2 Tbs. minced dill
  • 1 tsp. vinegar
  • ¼ tsp. kosher salt
  • 3 heads romaine, quartered into 12 wedges
  • 1 cup shredded carrot
  • 1 cup cherry tomatoes, halved
  • 1 cup sliced cucumbers

Instructions

  1. Make the dressing: In a small bowl, whisk together the mayonnaise, yogurt, scallion, dill, vinegar, and salt.
  2. Arrange the wedges on 4 plates and top each with the carrots, tomatoes, and cucumbers. Drizzle on the dressing.
