Anyone who wants to keep Salmonella or E. coli off their dinner plates should be thrilled that today the Biden administration pounded the final nail in the coffin of the Trump-era scheme to “sunset” some 18,000 consumer protections. It’s worth remembering that this ill-conceived and unlawful attempt to sabotage the nation’s health and safety regulations was cavalierly finalized on the very day the sun set on the Trump administration itself.
